This vegan peaches and cream ice cream lets me enjoy a favorite dessert from my childhood while still eating healthfully. A drizzle of raspberry balsamic vinegar adds tart notes to complement the sweetness. If you’d like to thicken the balsamic to a glaze, simply simmer raspberry balsamic vinegar until reduced to desired consistency.

Ingredients
- 2 cups frozen sliced peaches (8 oz.)
- 2 bananas, peeled, broken into chunks, and frozen
- ½ cup unsweetened, unflavored plant milk, such as almond, soy, cashew, or rice
- ½ teaspoon vanilla powder or pure vanilla extract (optional)
- Raspberry balsamic vinegar, for drizzling (optional)
Instructions
- In a high-power blender or food processor combine peaches, bananas, milk, and, if desired, vanilla. Blend until smooth and creamy.
- Scoop ice cream into bowls and drizzle lightly with raspberry balsamic vinegar.

(5 from 3 votes)I had a 10z bag of org peaches, so I used 3 frozen bananas, 1C of frozen sesame seed milk (two ½C cubes), and 1t vanilla extract (DIY made with organic vodka). Totally unimpressed with it. Put it in 3 containers (1 banana per serving) and threw in freezer. Next day I put one container on counter and after 10 minutes or so, I started scraping the solid ice rock with a serrated spoon. The more pliable the ice rock, the more on the spoon, the more I liked it. Finished the container and I'm full and happy. IT'S FRIGGIN' GREAT!!! Fabulous meal! Didn't do the vinegar thing. My formula will be 3 mega ripe bananas, 1C DIY sesame seed milk, and 10z of whatever fruit I have. It seems to me that the end result would be exactly the same if I had started out with nothing frozen.
You can freeze fresh peaches after washing and cutting them up if you are going to blend them, it does not matter. Cut them smaller though because they are not soft hard like bananas are when they are frozen. I make frozen yogurt with frozen peaches, a little honey or maple syrup and some dairy free yogurt. Then you don't need bananas, using bananas will sweeten it without any liquid sweetener and will make it creamier but the frozen yogurt is still good without bananas.
What can I substitute for bananas? I can't eat them, and so many of the recipes use them.
Can you use fresh fruit and freeze or will freezing the fresh peaches destroy the texture? I've froze fresh peaches before seems to change their consistency the break down and get mushy and liquefy Do you know how long it would last in the freezer.
Julie, it would last forever in the freezer. Do you have an expectation that it would "go bad"? I don't see that ever happening.
I made a second batch and this time I doubled it. Now I know that using frozen anything is not at all important. 6 mega ripe bananas NOT FROZEN 2C sesame seed milk NOT FROZEN 20z fruit: 7z red grapes NOT FROZEN & 12z bag of frozen blueberries Maybe it's that the sesame milk (no straining) was fresh but this batch is SOOOOOO GOOD!! Must let it sit in freezer at least 10 hours to make sure it's a solid rock. I would put it in popsicle molds but I can't find them. So I put it all in 2C glass containers, filling some halfway and a few all the way to the top. This is so delicious and bone healthy with the sesame milk. Again, USING UNFROZEN INGREDIENTS IS MUCH EASIER AND THE RESULT IS THE EXACT SAME AS WHEN I THREW FROZEN INGREDIENTS INTO THE VITAMIX.

Hi Julie, I think that however it goes into the blender and then stashed in freezer for several hours or overnight in containers or popsicle molds would work JUST FINE. When I try that SOON, I'll post my review of what I will have ended up doing. What have you done?

I would also like a substitute for bananas. They trigger migraines for me.
