Take your taste buds on a tropical vacation with this cold and creamy concoction that tastes like sunshine in a glass. Blended banana and pineapple are infused with the invigorating flavors of ginger and turmeric so you end up with a slushy treat that’s halfway between a golden milk latte and a tiki drink. A few tablespoons of quick-cooking oats add extra fiber and thicken the smoothie so you stay full for longer. And while it’s possible to use fresh bananas in this recipe, we highly recommend freezing them first so you don’t have to water down your drink with ice cubes. Once the bananas are good to go, this recipe whips together in just 10 minutes! If you’re feeling fancy, garnish your glass with a pineapple wedge for extra flair.

Ingredients

  • 1 banana, sliced and frozen
  • 1 cup unsweetened, unflavored plant-based milk
  • 2 tablespoons quick-cooking oats (see tip, recipe intro)
  • 8 oz. frozen pineapple (about 1 cup)
  • ½ teaspoon grated fresh ginger
  • ¼ teaspoon ground turmeric

Instructions

  • Line a baking sheet with parchment paper. Freeze bananas on prepared baking sheet for at least 2 hours.
  • In a high-powered blender (or food processor), combine plant milk, quick-cooking oats, frozen bananas and pineapple, ginger, and turmeric. Blend until smooth.
  • Pour into a glass and serve.

Wow! This is heaven. Creamy like eggnog and refreshing like margarita, but so much healthier than either! With a Vitamix, I didn't bother to grate ginger. Just threw in the ingredients. Didn't measure. Didn't use oats, but that sounds good if you're hungry. It was a delight. Can't wait to share with friends when they come over. I happen to have some tumblers decorated with an elegant gold pineapple. How perfect!

I already had sliced bananas in the freezer, so super quick to make. However, I had to add extra milk, a splash or two and also stirred in maple syrup at the end.

Since it has turmeric you may as well add a small pinch of pepper to activate the healing qualities of the turmeric. It doesn't change the taste. And this does taste good.

This was quick and refreshing! I had a bunch of cucumbers so even diced and froze half of one and threw that in too!
