This strawberry-chocolate nice cream (plant-based ice cream made with frozen bananas) is as pretty as it is delicious. Dark chocolate chunks make the healthy dessert taste especially decadent.

Ingredients

  • 4 medium bananas, peeled, frozen at least 2 hours, and cut into 1-inch chunks (3 cups)
  • 8 ounces frozen strawberries (2⅓ cups)
  • 2 tablespoons pure maple syrup (optional)
  • Dash sea salt
  • 1 ounce unsweetened dark chocolate, chopped
  • Fresh mint leaves (optional)

Instructions

  • In a food processor combine frozen bananas, frozen strawberries, maple syrup (if using), and salt. Cover and process until smooth and creamy, stopping processor a few times to scrape down sides. Stir in chocolate.
  • Serve immediately for soft-serve, or for a firmer ice cream, transfer mixture to an airtight freezer-safe container. Freeze 1 to 2 hours. If desired, garnish with mint leaves.

I just finished making this. It is ABSOLUTELY DELICIOUS!! I omitted the maple syrup…it didn’t need any sweetening at all!! I can’t wait to try the other three flavors! The only thing was I let the bananas and berries thaw about halfway because I was afraid of damaging my Kitchenaid food processor…it was jumping all around the counter. Next time I’m going to not even freeze them first.

AWEsome!! I used old frozen bananas and strawberries in my food processor. I needed to add a little coffee creamer (figured it was a thicker milk). I also added the maple syrup, dash of salt, and choco chips. Turned out delicious. Thanks!!

My strawberries were freshly frozen, meanwhile bananas were not, and it came out as a crumbly icy mess. I tried a food processor and a blender (we have Ninja), it was impossible to blend it into a creamy smooth texture. I wonder if bananas must be only freshly frozen too?.. Thank you for including measurements besides US ones.

Arena, I find that a good processor is necessary for this recipe. A blender tends to heat the ingredients because they are closer to the motor. And it takes some time. I find about 15 minutes is the sweet spot for perfect soft serve.

I always add a bit of plain soy "milk" to my Nice Cream, and mix it in my food processor. Not for 15 minutes though! MAYBE one minute.
